Two healthy recipes to try Rainbow veggie pasta salad
  • 2 cups pasta (any shape)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (red, yellow, green), diced
  • 1/2 cup black olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • Fresh basil leaves, chopped (for garnish)

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 garlic clove, minced
  • 1 teaspoon honey (or maple syrup)
  • Salt and pepper to taste
Method
  1. Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, black olives, red onion, and feta cheese (if using).
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper to make the dressing.
  4. Pour the dressing over the pasta salad and toss until well combined.
  5. Garnish with chopped fresh basil leaves before serving.
