Amura by ngel Len has opened at Mount Nelson , A Belmond Hotel, Cape Town, marking Michelin-starred Chef ngel Len s first restaurant outside Spain.
Len joins the project as Culinary Director, bringing his marine-focused culinary approach to Cape Town.
Open year-round, the restaurant is led day-to-day by Head Chef Guillermo Salazar whose experience includes Eleven Madison Park, Arzak, Akelare and Gramercy Tavern and senior roles within the Aponiente group. The menu draws on Lens work at Aponiente while engaging with South African ingredients and coastal ecosystems.
